In brine olives

The itrana olives are in two species: the green Itrana, with the typical green-yellow color and the famous black Itrana, called “Gaeta”, with a wonderful dark violet color.
The “Gaeta” olives are very famous for their strong, good aroma and a pleasant, winy flavour.

Seasoned olives

A selection of only ripe olives is used to produce the dried Gaeta olives with traditional methods.
All the olives selected are dried, spiced with fennel seeds, orange peels, red hot peppers and then preserved in extra-virgin olive oil. The dried Gaeta olives are really unique in making the difference in a rich “happy hour”.
